How to Make It

Step 1

Combine first 5 ingredients in a large bowl; stir well. Stir in egg yolks, green pepper, onion, salt, and green chiles.

Step 2

Beat egg whites at high speed of an electric mixer until stiff peaks form. Gently fold into rice mixture. Spoon mixture into a lightly greased 2-quart baking dish. Bake, uncovered, at 350° for 30 minutes or until thoroughly heated.
