This is my husband's favorite dish, hands down. We all love it. It's a great way to use up leftover holiday ham, and you can vary the amounts according to what you have. The taste all rides on the quality of your ham so be sure it's not a bland one. I do add a little Summer Savory since I put that in anything with green beans. I serve it as an entree since it has everything all in one pot - just make some cornbread and you're all set. It keeps well for lunches later.
