Tuck some tiny new potatoes and baby carrots around the chicken for a complete meal...so simple and delicious!
Place chicken in a large greased roasting pan; sprinkle with salt and pepper. Place onion, garlic and rosemary inside chicken; brush butter over chicken.
Bake, uncovered, at 400° for 1 1/2 hours, basting with pan juices, until golden and juices run clear when chicken is pierced with a fork.
