How to Make It

Combine parsley, thyme, goat cheese, and grated garlic. Cut a slit in each chicken breast to form a pocket; stuff with mixture. Sprinkle with salt and pepper. Heat olive oil in a skillet over medium-high. Cook chicken 6 minutes per side.

Restaurant quality entree.  Sometimes simple is just better.  I cooked the chicken for 10 minutes on each side.  I also doubled the garlic (minced) and salt/pepper.  Served along side roasted garlic couscous and CL's Sauteed Tomato and Onion Kale (Sept 2016).  A nice chardonnay made it a perfect dinner that wouldn't hesitate to serve to guests.  Super easy is a plus!
