These were great. I soaked and boiled my own beans and just used commercial salsa, but the quesadillas made for an attractive and tasty appetizer.
These were okay but a little bland considering all the awesome ingredients (and we used pepper jack!). They really didn't taste like anything at all. Some additional spices (cumin? cayenne?) might help, or perhaps some fresh lime juice?
I have made this COUNTLESS times. I buy a jar of green salsa to make it so much simpler. I have prepared this for vegetarian guests, my family, and we all LOVE IT!
