Antioxidant-rich ginger adds nutritious benefits and sweet flavor to fuss-free Gingered Sweet Potatoes.

How to Make It

Pierce sweet potatoes with a fork. Microwave at HIGH 10 to 12 minutes or until tender, turning over halfway through. Peel, cut into large chunks, and process in a food processor with orange juice, ginger, and orange rind until smooth. Stir in salt and pepper.
