Grated ginger adds a bit of zip to Gingered Carrot Smoothies.
1 cup plain 2% reduced-fat Greek yogurt
2 cups chopped peeled carrot
1/2 cup carrot juice
1 tablespoon grated peeled fresh ginger
1 1/2 cups crushed ice
1/4 cup honey
How to Make It
Place yogurt in a blender. Place carrot, carrot juice, and ginger in a food processor. Process until smooth. Strain carrot mixture through a fine sieve; discard solids. Add carrot mixture, crushed ice, and honey to blender; process until smooth.

This is really yummy - a bit complicated to make, but worth it. I had to process the heck out of the carrot mixture to make it into a paste, and also had to add more carrot juice than the recipe calls for. I kept some of the solid carrot paste in the smoothie, seemed like such a waste to toss it all. Next time I'll keep even more. I use agave nectar instead of honey, and about of what was called for.
