Commit this simple rub mixture to memory, and use it on pork chops, too. Serve with buttered pasta garnished with parsley.

How to Make It

Step 1

Prepare broiler.

Step 2

Combine first 4 ingredients; rub over lamb. Spread garlic mixture evenly over chops. Place lamb on a broiler pan coated with cooking spray; broil 5 minutes on each side or until desired degree of doneness.

Good - pretty basic.  I use fresh minced garlic and grill the chops on our Traeger.

This was my first effort to cook lamb chops, and it turned out great ! I was making only 2 chops (eating solo...), so had ~ 8 oz total of chops, but halved (rather than quartered) the recipe for the rub. Also, I added a little melted butter and olive oil to the rub to help it spread onto the chops. I used a digital thermometer, set to alarm at 135 degrees - it turned out great, though I think that it would have been better a bit lower - perhaps 130 degrees. Terrific, and simple.

I love lamb chops this way. I make small crosshatch scoring on the chops before rubbing in the garlic and rosemary mix (I also add a little butter to the rub mix) and my preference for cooking them are on the barbie. They are finger licking good.

VG! I also used this for Rack of Lamb, rubbed w/ mixture, placed in ziploc bag with about 2 T sherry and marinate. Grill about 25 min. turning once.
