Very tasty, light, easy to make salad. Perfect for warm summer evenings or taking to a friend's barbeque. The proportions of the ingredients are close to just right, although, I would use another half of an avocado next time.
I LOVE this! I would recommend using slightly less vinaigrette. To me, it was a little wet at first. I also think it's even better the second day. From now on, I'll make this ahead and let it sit in the fridge for several hours before digging in. Yum, yum, YUM!
This is a keeper. Something different other than potato, pasta or a green salad for summer. I kept the recipe as is but it's certainly flexible enough to allow for additional or modified ingredients. Loved it!
