This cooling side dish is our interpretation of shlata chizo, a classic Moroccan salad. Prep Time: 20 minutes.

How to Make It

Step 1

In a medium bowl, toss together the grated carrots, cilantro, feta, and olives.

Step 2

Pour the lemon juice into a small bowl; slowly drizzle in olive oil, whisking to blend.

Step 3

Pour dressing over carrot mixture, toss to combine, and sprinkle with toasted cumin seeds.

Step 4

I did not like this recipe but my family did. It is weird that it is mostly carrots yet doesn't taste like carrots at all. Next time we are going to try it without cilantro.

Made as is, and was great. Boyfriend said it was the best salad he's ever had. That is a stretch if you ask me, but it was pretty good.

I loved this salad. Thx to the previous reviewers suggestion I substituted raisins for the olives. Great suggestion. That was the only substituion I made. The flavors were amazing together. I couldn't stop eating this.
