This recipe takes a little more time and effort, but the result is an extremely light, and fluffy waffle. They are soft with a delicate crispness. If you're favorite waffle is hard and crunchy this isn't for you. The best part of this amazing waffle is how absorbent it is; it's fine sponge like texture allows all the luscious syrup to soak in. Yum!

It seems that whipping the egg whites makes the difference, as previously I was practically making waffle cones. The batter could be just a bit thicker perhaps, but this recipe is worth sticking with for a while, at least while I tweak it.
I made these waffles sometime ago and searched far and wide for the recipie after my house burned down. I rarely post reviews but these waffles truly are the best I have ever tasted. My family loved them. They are going to be ecstatic when I make them again.
