I used the flaky all-butter pastry dough recipe for this and for my apple pie, and it was perfectly delicate and flaky with a lovely buttery flavor. I ended up making one batch in my Ninja blender because it wouldn't fit in my food processor, and despite being much more powerful, the dough came out fine. I also made it about 3 weeks ahead of time and froze it, and it thawed out perfectly.
