This super simple recipe is for when you have perfectly ripe avocados--there's no need for tomato or other complications. You just want the avocados' richness to shine against the zip of lime and cilantro, their flavor deepened with fish sauce.

How to Make It

Place avocados in a medium bowl; mash roughly with a fork. Add lime juice, fish sauce, and salt; mash to desired consistency. Stir in cilantro.

A simple, good tasting guac. Be sure to either use 2 LARGE avacodos or 3 small ones otherwise, the fish sauce taste will come though strong.

This is really ridiculously good. Obviously add spice if you like it but the fish sauce deepens it and doesn't taste like fish in the slightest.
