  • Preheat the oven to 350°F. Lightly grease a doughnut pan and line a tray with parchment paper.

  • Sift the flour and baking powder together into a large bowl. Whisk in the sugar, nutmeg, and salt. Add the butter and use your fingers or a fork to mix into the dry ingredients as you would in making a pastry crust, until evenly distributed. Add the warm milk, yogurt, vanilla, and egg and stir until just combined. Do not overmix.

  • Use a piping bag or a spoon to fill the doughnut pan cavities three-fourths of the way full. Bake until the doughnuts are a light golden brown and spring back when touched, about 10 minutes. Let cool slightly before glazing.

  • While doughnuts are cooling, prepare the glaze. In a microwave safe bowl, combine the white chocolate chips, heavy cream, and corn syrup. Heat for 45 seconds in the microwave. Remove, give it a stir, and let sit for a couple of minutes for the residual chips to melt. Stir in the hot sauce, cayenne, cinnamon, and just a small dab of red food coloring.

  • Dip the doughnuts into the glaze. Place on the parchment paper–lined tray. Sprinkle with ghost pepper sea salt to taste and pop rocks before the glaze sets.
