Make a quick and easy rice side dish by adding chopped dried figs, carrot and fresh ginger to microwave brown rice.
1 (8.8-ounce) pouch microwaveable cooked brown rice (such as Uncle Ben's Ready Rice)
1 tablespoon olive oil
1 cup matchstick-cut carrots
1 tablespoon minced peeled fresh ginger
2 garlic cloves, minced
1/2 cup small dried figs, quartered
How to Make It
Heat rice according to package directions; keep warm.
While rice cooks, heat oil in a large nonstick skillet over medium-high heat; add carrots, ginger, and garlic. Sauté 3 minutes or until browned. Add figs; sauté 2 minutes or until hot. Remove from heat; stir in rice. Serve immediately.
