These are super delicious, especially for being so simple! A perfect vegetarian entree for a sweltering summer night. I usually use whole wheat bread, but I've served them in wraps. too. And sometimes I add some greens (spring mix, baby spinach, arugula - it all works!).

How to Make It
Combine first 4 ingredients, tossing with a fork until well combined. Spread about 2 1/2 tablespoons cheese mixture onto each of 4 bread slices; top each sandwich with 2 tomato slices and 1 bread slice.
