How to Make It

Combine first 7 ingredients in a large bowl; stir well. Add pasta; toss gently. Serve at room temperature.

With the protein I used, I opted for basil instead of cilantro. DD loved it. Will definitely try again with the cilantro.

I was surprised by how much I enjoyed this recipe. It was so quick and easy and had great flavors. It was a bit strong for my 6 year old, but my husband thought it was great. I'm thinking about adding grilled chicken next time to make it more filling. Great recipe!

I added black beans to give this dish some added protein and it worked out well. I also added some lime juice for some extra kick. It was quick and easy and very tasty. I'll definitely make it again.
