Okay ya'll......best grilled cheese i have ever made! When i read that you mix grated parm with the butter and put on the grill side of the bread, i was just a little apprehensive. But ya'll.....it makes the outside of the sandwich SOOOO crunchy! Seriously, you have to try this. I used fresh mozzarella and i did add just a bit of shredded cheddar too....i mean can you have too much cheese? My hubby asked for bacon on his, so that happened. All through dinner, he just kept saying how wonderful it was.
You just HAVE to try this if you loved grilled cheese. Thanks so much for the recipe! This one made it into my written recipe book.....and not many recipes make it there!

I eat a grilled cheese sandwich about 3 times a week and consider myself a big fan but I am not a fan of Parmesan cheese; so I was a bit skeptical about adding it to the butter. The Parmesan was not overwhelming and it added a nice flavor and enhanced the texture to the outside of the sandwich. The only thing that I did differently is that I lightly browned the inside slices of the bread before assembling. I like my bread toasted on both sides. I'll be making this again and sharing with the family. Next time, I may spread some of the butter mixture on the inside bread slices to see what that does!
This is a great recipe, Loved how the bread came out. I served this with tomato soup and it was a great match.

This was so easy to put together with pretty simple ingredients. My kids loved them, and so did me and the hubby. The bread is definitely the big winner, along with that butter-mixed-with parmesan. The cheese is just the "icing" on the cake. A big keeper!
