There are some things that only tater tots can bring, like a buttery yet starchy taste and a texture that’s simultaneously crispy and soft. And those mythical tater tot properties work best in a casserole, where they’re surrounded by fluffy eggs and ooey, gooey cheese. This is an uncomplicated tater tot casserole but elements like fresh chives and pepper Jack cheese give it just enough flavor and spice to distinguish itself from other cheese-and-potato bakes. Serve it as an easy Sunday brunch, or perhaps as a side at a holiday meal.

  • Preheat oven to 350°F. Whisk together eggs, pepper Jack cheese, milk, salt, and pepper in a large bowl. Arrange potato tots in a single layer (some will overlap) in a lightly greased (with cooking spray) 13- x 9-inch baking dish. Pour egg mixture evenly over potato tots. Sprinkle top evenly with Cheddar cheese.

  • Bake in preheated oven until set and cheese is golden brown, 40 to 45 minutes. Let stand 10 minutes before serving. Garnish with chives.
