This easy recipe for classic coleslaw is the perfect creamy, crisp, and delicious accompaniment to just about anything hot off the grill. And the added hit of smokey, savory flavor from crumbled bacon puts it over the top. (Of course, you can leave the bacon out if you wish to keep the slaw vegetarian-friendly.) For another tasty twist, reader Nora Henshaw likes to add a little extra crunch to her coleslaw with a toasted peanut variation.

  • Crisp bacon slices according to package directions.

  • Whisk together mayonnaise, sugar, and vinegar in a large bowl. Crumble bacon, and add to mayonnaise mixture in bowl. Add coleslaw mix and salt and pepper to taste; toss to coat. Cover and chill at least 1 hour or up to 8 hours. Serve with a slotted spoon.

Creamy-Crunchy Peanut Coleslaw: Heat 1/4 cup chopped lightly salted peanuts in a small skillet over medium-high heat, stirring often; cook 2 minutes or until lightly toasted. Let cool 15 minutes. Prepare the Easy Coleslaw recipe as directed, adding peanuts before chilling.
