  • Combine almonds and pistachios in a medium skillet over medium. Toast in skillet, stirring often, until lightly golden and fragrant, about 5 minutes. Remove from heat; set aside.

  • Place chocolate chips, butter, and salt in a large bowl set over a double boiler over medium. Cook, stirring constantly, until melted and smooth. Remove from heat, and stir in amaretto until smooth. Fold in toasted nuts, biscotti, and cherries until well combined. Cover and chill 1 hour. 

  • Form chocolate mixture into a dense, smooth, 12-inch log on a piece of plastic wrap. Once desired shape is formed, transfer log to a clean sheet of plastic wrap, and wrap tightly. Chill 1 hour or until firm. 

  • Unwrap and lightly sprinkle powdered sugar evenly over chocolate log. Let stand at room temperature 30 minutes before serving.
