This easy chicken gumbo calls for a flavorful roux made by cooking flour in hot oil.

How to Make It

Step 1

Heat oil in a large Dutch oven over medium-high heat; gradually whisk in flour, and cook, whisking constantly, 5 minutes or until flour is chocolate colored. (Do not burn mixture.)

Step 2

Reduce heat to medium. Stir in onion and next 4 ingredients, and cook, stirring constantly, 3 minutes. Gradually stir in chicken broth and sausage. Increase heat to medium-high, and bring to a boil. Reduce heat to low, and simmer, stirring occasionally, 20 minutes.

Step 3

Meanwhile, prepare Okra Pilau. Stir chicken into gumbo; cook, stirring occasionally, 5 minutes. Serve with Okra Pilau.

Step 4

Kitchen Express Note: We love the flavor of fresh onion, bell pepper, and celery, but to make it even quicker you can substitute 1 (10-oz.) package frozen diced onion, red and green bell peppers, and celery.

so easy to make and flavor was terrific! I have an athentic gumbo recipe from my Cajun uncle and I think this taste better and is a lot easier to make. Definitely going into the monthly recipes for family

My family loves this recipe. It is not hard to make, in my opinion, but it does take a little more time than the average soup recipe. We live in the Northeast now, so finding the Andouille sausage and okra were challenging. We like spicy food, so this hit the spot. Most of the spice comes from the sausage, so if you like it less spicy, I would use less sausage.

This recipe was not exactly easy. I used what I considered a medium dutch oven, but that was apparently too big. The amount of oil and flour was too small for me to tell if the roux was brown enough. It did not work out and I ended up throwing everything away. What a waste of food!

I've never made gumbo before, but I've tasted a lot. This was FANTASTIC!! I will make it again for sure. Next time, I will work on preparing some of the steps prior to make it quicker at dinner time. I used 3 teaspoons of Cajun seasoning, and my husband said it was a little too spicy. I thought it was great!

I will surely make this recipe again. My husband loved it. It made quite a big amount, so we had leftovers several times and he did not complain a bit.

This has a nice flavor. My husband said "please make again". Even my picky son liked the flavor. It was not as "easy" as I thought since you spent quite a bit of time at the stove stirring and browning the vegetables.
