Try this cheesy potato casserole for a simple and tasty weeknight dinner.

How to Make It

Step 1

Preheat oven to 350°. Cook hash browns in a lightly greased large nonstick skillet over medium heat, stirring occasionally, 12 minutes or until golden brown.

Step 2

Stir together hash browns, 1 cup shredded cheese, and next 6 ingredients. Spoon mixture into a lightly greased 8-inch square baking dish, and sprinkle with remaining 1/2 cup cheese.

Step 3

Bake at 350° for 40 to 45 minutes or until edges are lightly browned. Let stand 5 minutes before serving.

Easy and tasty!

I have made this many many times, with different variations, and it always goes quickly!  I have used what I have on hand at the time, so maybe switched up to  plain shredded cheddar, onion and garlic powder in place of chives and fresh garlic, or whatever is in the house.... no matter what is added, it always tastes delicious! The cream of mushroom, sour cream, and cheeses blended together is what really makes the dish! Enjoy it however your family's particular tastes, it is always a winner!
