A delicious take on baked apples. Serve warm with a scoop of vanilla ice cream or frozen yogurt.
In a large nonstick skillet, heat the cider over medium-high heat until warmed through. Stir in the apples, raisins, vanilla, and cinnamon and cook, occasionally stirring gently, until apples are soft and most of the liquid has evaporated, about 8 to 10 minutes. Serve warm.
