How to Make It

Step 1

Combine first 5 ingredients (through salt) in a large microwave-safe bowl. Microwave at HIGH for 1 minute. Remove bowl from microwave; stir with a large rubber spatula coated with cooking spray until smooth. Stir in cereal. Stir in chocolate chips.

Step 2

Coat a 1/4-cup dry measuring cup with cooking spray. Lightly pack measuring cup with cereal mixture; drop onto a parchment paper-lined baking sheet (you should have 15 cookies). Freeze 8 minutes or until firm.

Nothing fancy here but quick and easy to make and very tasty.  Definitely use a big bowl - I nearly had marshmallow all over my microwave it puffed up so high - which would've been a horrible, sticky mess to clean.  Phew.

Update:  after a day in the fridge, these tasted much better.  The cereal got a bit softer, reminding me of Golden Graham's smores bars that we used to make as kids.  So these have potential...will keep trying to make them work vegetarian-style.  Maybe they just need more marshmallow??

A great after school snack.  My 8 year old enjoyed making them with me.  Generous use of cooking spray is a must to avoid sticking.  We will definitely make this again.

Great dessert that is not too sweet and healthier than rice crispy treat. Both of my kids not only ate them, but also gave them a two thumbs up. I loved the combo of chocolate and crunch. Added bonus that it didn't take much time at all to make them.

Vegetarian disaster

Tried these with vegetarian marshmallows.  They must not melt just like regular marshmallows, since the cereal barely stuck together.  And the Kashi Go Lean is not very tasty.

For once, I made this recipe exactly as directed. It took minutes to make and was extremely easy. This is a nice crunchy chocolaty treat that is a bit healthier than a rice krispie treat.
