Add more Cajun Spice Mix, a teaspoon at a time, if you enjoy spicy rice.

How to Make It

Step 1

Bring broth and bay leaves to a boil in a medium saucepan; add rice. Cover, reduce heat, and simmer for 20 minutes or until liquid is absorbed. Discard bay leaves. Place rice in a large bowl.

Step 2

Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add onion and next 5 ingredients (through garlic); sauté 7 minutes. Add sausage mixture and parsley to rice, tossing to combine.

This was good. I used artichoke garlic chicken sausage and pre-made Cajun seasoning. I served with shrimp and Brussels sprouts.

Made this tonight and used Gimme lean sausage style instead of the chicken sausage to save on some fat. It was very good and I look forward to some leftovers for lunch tomorrow. I did cut the cayenne amount in half for my heat intolerant family :)

CL's Dirty Rice recipe is so easy and very yummy. Entire family enjoyed this, even the kids. Nice amount of heat with recommended amount of Cajun Spice but will add a teeny bit more next time since we like extra spice. Served with homemade buttermilk biscuits and a green salad. Excellent meal!

We made this dish along with the CL Barbecue Shrimp recipe for Fat Tuesday. We thought it was a great side and easy. It's pretty spicy for a CL recipe, but that's just fine with me.
