Deep-Dish Peach Pie
Nothing says "summertime" like a homemade peach pie. The filling mixture is thickened with both tapioca and cornstarch, and a sprinkling of sugar over the crust adds a bit more sweetness.

I can't believe others did not have a problem working this crust! It was a tasty crust and baked beautifully, but it was impossible to roll... my feeling was too much shortening & butter making it quite "greasy wet" while being too dry with only 1/4 cup water. I didn't put more water in while mixing because it was "wet" ... but upon rolling, I discovered it definitely needed more water... but it was too late. The pie did get rave reviews in the end!
Just ate a warm slice of this delicious pie. The crust was so flaky and tender, and was easy to work with. I prefer to use the food processor (lazy :) so that was a bonus. I really liked the addition of cinnamon in the crust. The filling wasn't too sweet, but was flavorful. This goes to the top of my list for crust recipes!
AS A NOVICE, THIS PIE WAS EASY TO MAKE AND WAS SO GOOD!
