Switch up your usual chicken salad for Curried Chicken Salad. This spicy-sweet version stirs in ginger and curry powder with raisins, coconut, and peanuts.
Whisk together first 2 ingredients in a large bowl; whisk green onions, ginger, and curry powder into mayonnaise mixture. Stir in chicken and celery. Stir golden raisins and bell pepper into chicken mixture. Add salt and pepper to taste. Chill 3 hours. Stir in coconut and top with peanuts just before serving
