This dish is really good. Ive mase this twice with different tomatoes I had on hand. I also used a little more onion the 2nd time around and added grape tomatoes in the last hour with the chick peas. Yummy!! Oh and I added a wee more salt and seasoned my chicken before I put it in the pan.
I didn't have chickpeas used small white beans instead. Really simple and quick to make. Great slow cooker meal. Shared with co-worker, she loved it as well. Ate it with cornbread. Added other seasoning such as cumin, ground black pepper and used kosher salt.
My family enjoyed this dish, and it was very easy to prepare. Since we prefer spicy food, I increased the spices (as recommended by other reviewers). Also, instead of 2 cans of chickpeas, I used one can and added two medium chopped zucchinis.
Used 4-5 chicken thighs, added 1 tsp coriander and 1 tsp cumin, and put everything in crockpot - even the beans. It turned out great, and I will definitely make again. Next time I think I'll add cauliflower florets to get more veggies. I'll also chop the onions smaller. The taste was delicious!
Husband really liked this, me, not so much. I thought it was just OK. Even though I added more curry and a little bit of cumin, the flavor seemed one-dimensional to me. Husband, on the other hand, thought it was a great light curry. I probably won't make this again, but will look for another, similar recipe that has more depth of flavor.
Excellent meal and so easy to do. I added a little red pepper flakes for some heat but other than that, this dish is both delish & healthy! Gave one star less simply because of my need for the dish to be a spicier dish for my taste.
