This Cucumber Tomato Salad takes some of summer’s finest produce and combines it with feta and fresh herbs, making it the perfect opener for lunch or dinner on a hot day. The crumbled feta adds both seasoning and softness, while the fresh mint, dill, oregano, and parsley add texture and flavor. Since this salad comes together in a flash, you can prepare it ahead of time and let it marinate for a few hours before serving. 

How to Make It

Whisk together first 3 ingredients in a small bowl. Toss together cucumbers, next 5 ingredients, and vinegar mixture in a large bowl. Season with salt and pepper. Sprinkle with feta.
