How to Make It

Step 1

Combine first 6 ingredients in a large glass bowl; let stand at room temperature, stirring occasionally, 1 hour. Drain.

Step 2

Bring sugar and next 3 ingredients to a boil in a medium saucepan over medium-high heat. Boil, stirring constantly, 1 minute or until sugar is dissolved. Let stand 1 hour. Pour evenly over vegetables. Cover and chill 2 hours.

This is a superb summer salad. If you love bread and butter pickles you will love this salad. I'm not crazy about cucumbers, but I really enjoy this salad. I've made it early in the day before a cookout and a day in advance. The cucumbers stay crispy, and it always gets rave reviews at cookouts. I follow the recipe exactly and love to serve it with grilled chicken and creamy cole slaw. Someone always asks for the recipe.

This is a fabulous recipe. I was limited on time so only let the veggies "rest" for 1/2 and hour and cooled the vinegar mixture in the fridge. I also used 1/2 the sugar and vinegar b/c I don't like it too wet or sweet. I substituted radishes for the celery!
