Serves 6 (serving size: about 1/3 cup)

Cucumber-Mint Tequila Tonic is the perfect warm weather cocktail. Made with fresh mint and cilantro leaves and chopped cucumber, it's refreshing and fabulous.

How to Make It

Combine first 6 ingredients in a food processor; pulse until smooth. Scrape mixture into a bowl; stir in tequila. Chill. Strain. Stir in tonic water. Serve over ice.

As a die hard lover of tequila, I can say that this is hands down my favorite tequila drink. And I do NOT say that lightly. I made these for a dinner party at a friend's house and we couldn't get enough of them. They are delicious and refreshing.

Refreshing cocktail. This would cost $12+per drink at a restaurant. You can use basil as well. I cut back on the sugar by using 1/4 cup agave and seltzer water. Vitamix blender made everything smooth, don't need to strain.

Oh my goodness, are these good! Very refreshing, and not that difficult to make. I like that you can mix up a batch of these at once, rather than having to make one at a time. I advise drinking them up ASAP after making them, though. My second one (Yes! I did!) had a slightly "off" taste, I think, from sitting around a bit.
