Cucumbers are a wonderful alternative to crackers during snack time. For Cucumber-Feta Bites, we top them off with a little cream cheese, nonfat Greek yogurt, feta cheese, and walnuts for a protein-packed crunch.

How to Make It

Mix yogurt, cream cheese, and feta. Spoon into cucumber; top with walnuts.

The overall concept and ingredient list is great - can't really go wrong with this kind of a recipe.  However, I would agree that the proportions are okay for a true snack, but you could easily times this recipe by 2 or 3.  I would also suggest adding fresh dill, maybe a little squeeze of lemon juice, and top with a sprinkle of salt and pepper! I did without the walnuts, though I'm sure that'd be great.

Looks good

If only the video matched the recipe ingredients...1 SMALL cucumber, 2 TSP walnuts"... the appetizing video shows a rather large cucumber and way more than 2 tsp walnuts. At least the photo that accompanied the recipe seemed more realistic. It won't stop me from making it, but often the quanity shown in photos or videos are so misleading.
