Prep: 5 minutes; Cook: 8 minutes. Choose a banana that is firm, yet ripe, so that it will hold its shape when cooked.
How to Make It
Step 1
Combine first 4 ingredients; rub spice mixture evenly over both sides of pork.
Step 2
Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add pork, and cook 3 minutes on each side or until done. Transfer pork to a plate, and keep warm.
Step 3
Coat pan with cooking spray; add banana and garlic, and sauté 1 minute. Stir in lime rind and juice; cook 30 seconds.
Step 4
Place pork chops on plates; spoon banana mixture over pork.
