Love this recipe. I've been making it regularly for a couple of years and we never get tired of it. Definitely serve with salsa and/or sour cream. I like the red onion idea. To us, the secret is in the tortilla. If you have access to fresh homemade tortillas (Central Market for my Texas friends) use those, it makes a big difference.
Read MoreI used a prebaked pizza crust and actually had enough to make two pizzas. Yum! I though the red onion sounded good also, and the salsa is a good idea as the topping doesn't have much moisture. I would make again for something different. The cilantro really livens things up!
Read Morea-mazing. next time i might add some green or red onion. i added a dash or two of onion powder this time, which was fantastic. and mine was great with frozen corn and ground cumin as well. so fast and easy, especially starting with a rotisserie chicken.
Read Morethis recipe ROCKED. my boyfriend couldn't stop complimenting the entire dish as we ate. only change i made was adding half a green pepper chopped to the skillet ingredients. it added to the flavor and color of the pizza toppings. would also advise having salsa and sour cream for additional toppings. we enjoyed this meal with a beer and re-runs of 24:)
