The cranberries in this recipe are left raw and shredded for extra crunch and tartness. Be sure to use clementines which, unlike tangerines, are seedless.
Grate zest from clementines to equal 4 tsp. Peel clementines, and separate into segments. Process zest, clementine segments, apple, and cranberries in a food processor until chopped. Transfer fruit to a bowl. Stir in sugar and next 2 ingredients. Cover and chill overnight. Serve with a slotted spoon.
