Cracked Crab with Tamarind Sauce
Notes: Tamarind is sold in many forms. The concentrate, not to be confused with paste or pulp, is a thick liquid created from the pulp, with the seeds and other solids strained out. It's available in Asian food stores. If you can't find it, in step 2 substitute 1 can (6 oz.) tomato paste and 1/4 cup lime juice mixed with 1 cup fat-skimmed chicken broth.
