How to Make It

Step 1

Combine water and salt in a medium saucepan. Bring to a boil; stir in couscous. Remove from heat; cover and let stand 5 minutes. Fluff couscous with a fork; spoon into a large bowl.

Step 2

While couscous cooks, combine lemon juice, olive oil, and pepper in a small bowl, stirring with a wire whisk. Add to couscous, stirring gently. Stir in beans and remaining ingredients.

Chef's Notes

Chop the tomato, onion, and parsley while the couscous cooks. To chop parsley quickly, pack the leaves into a measuring cup, and snip the parsley with kitchen scissors until it's finely chopped.

This recipe was totally bland and had basically no flavor. Black beans and couscous do not go that well together, and to top it off with parsley is just strange enough that I thought it might work, but it totally didn't.
