Bring chicken broth and water to a boil in a small saucepan. Stir in couscous. Cover, remove from heat, and let stand 5 minutes. Uncover; fluff with a fork. Stir in pine nuts, parsley, bell pepper, olive oil, salt, and black pepper.
Yum! I'm not a huge fan of couscous, but I did like it prepared this way. And it couldn't be easier.
