Use in Ham-and-Greens Pot Pie, which features ham, greens and cornbread and continues to be a go-to dinner for our food editors.

How to Make It

Combine first 3 ingredients; make a well in the center of mixture. Add eggs and buttermilk to cornmeal mixture, stirring just until moistened.

Hubby loved it! The cornmeal mix I used was Martha White's, & it says "Hot Rize" on the bag. Try using a self rising cornmeal mix. Excellent meal when you're trying to get more green stuff in your family's belly.

I really liked the recipe, but the cornbread did not rise. It just layed there and got hard. Did I use the wrong kind of white cornmeal? I used plain white cornmeal. It wasn't specified whether to us self rising or plain. What is cornmeal mix? It was very good except for that. I want to make it again if you can tell me more about the cornbread.
