Create a perfectly crispy and delicious fish stick right in your own kitchen using a secret ingredient you already have in the pantry: Doritos. While we love the “cool ranch” variety for this recipe, you could use any flavor that you like. Besides being infinitely tastier (and less mystery meat-like) than any fish stick from the freezer aisle, these crunchy, Doritos crusted fish sticks are easier to make than you might think given that they’re baked in the oven. They’re incredibly kid-friendly as-is, and would make a fantastic fish taco filling for a more adult dinner plate.

  • Preheat oven to 375°F (use convection setting if available). Whisk together flour and salt in a shallow dish, and set aside. Whisk together egg, egg white, and water in a second shallow dish. Process chips in a food processor until finely ground; transfer chip crumbs to a third dish. 

  • Cut fillet crosswise into 1 1/2-inch strips. Lightly coat each fish “stick” in flour mixture, then dip in egg mixture, allowing excess to drip off. Dredge in chip crumbs, pressing lightly to adhere. Place fish sticks on a baking sheet sprayed with cooking spray.

  • Bake in preheated oven until golden and fish flakes easily with a fork, about 15 minutes. Serve immediately.
