I read the reviews and only used 1 tbs of milk. I normally don't use frosting, but this will be my "go to" recipe going forward. It is not too sweet, not runny, and the flavor is SO GOOD!!! I used this batch on my coconut bundt cake and everyone loved it. Carrot cake muffins are next!!! Thank you
I tweaked it to make it my own, but it was fantastic! I would cut it in half for a 13x9 cake. I used heavy whipping cream instead of milk. This will be my new coconut cake frosting from now on. Yummy!
This recipe made the frosting way too runny with 3 tbsp of milk. I would cut it down to 1. Now I have runny frosting. :(
I searched for an easy frosting for coconut cake. I had so much to do for Christmas Eve dinner I needed uncomplicated recipes. I made a sheet cake and cut it to form a snowman for a festive touch. I didn't measure coconut flakes. I added a little bit since I didn't want to make the frosting of cut cake edges to be difficult and then sprinkled flakes on cake once done. I was blown away at how good this frosting tasted and its ease of spreading it on the cake. This will certainly be a go to recipe going forward. I love it!!! So much so, this is my first recipe review and I've gotten a lot of recipes online.

I made this frosting today and followed the suggestions of the previous comment for using cream of coconut instead of milk. It tasted fine, but didn't quite give the coconutty flavour I was looking for. Might try coconut extract next time. Again, it made way more than would fit on a 9 x 13 cake, which was fine because then I had extra to put on my graham crackers. Nonetheless, it was a delicious cream cheese frosting.
This recipe is very good but makes way too much frosting. I only used 2/3 of it on the coconut sheet cake. Also instead of the 3 T milk, I used 2 T of the cream of coconut from the cake recipe and I did not mix the coconut into the frosting, but sprinkled it on top.
