How to Make It
Cook egg noodles according to package directions. Drain and transfer to a medium bowl; toss with 1 tablespoon of the sesame oil. Chill 20 minutes.
Whisk together sesame paste, soy sauce, peanut butter, chile-garlic sauce, vinegar, garlic, ginger, sugar, and remaining 4 tablespoons sesame oil in a large bowl until blended. Add sesame paste mixture to egg noodles, and toss to coat. Divide noodles among 4 bowls, and top evenly with scallions and carrots. Sprinkle with sesame seeds, and serve with lime wedges.
