Serve this rice with practically everything, from fish tacos to Skirt Steak with Chimichurri Sauce.

How to Make It

Step 1

Heat a medium saucepan over medium heat. Add oil; swirl to coat. Add onion; cook 5 minutes or until tender, stirring frequently. Stir in rice, chicken broth, and 1 tablespoon lime juice.

Step 2

Bring to a boil; reduce heat, cover, and simmer 15 minutes or until rice is tender and liquid is absorbed. Remove from heat. Add remaining 1 tablespoon lime juice and cilantro; fluff with a fork.

The flavor was good, but the texture was mushy. I cooked according to directions. I will make it again; however, I will cook the onions then add them to my rice cooker with the other ingredients to get a better texture on my rice.
