The first time I made this, I had no lime juice but I did have lemons, so I used lemon juice instead. It came out great! The grilled chicken went in tacos that night, of which way too many were eaten! We're having grilled chicken tonight & this recipe was special-requested :-) but since I have lime, I get to experience the actual recipe this time around & I can't wait. It came out so juicy & flavorfully seasoned last time...
This was definitely easy to make and yes, it was juicy if grilled nice and slow. But it lacked flavor. Even with all the garlic - I'm not sure I'll make it again. I should say it is a low fat option and it could work chopped in a salad too. It's not my favorite. I'll keep looking.
Quick, easy, impressive results. Very tasty and juicy chicken, plus healthy! Family enjoyed it. I added a bit more lemon juice and let the chicken marinate for 90 minutes before grilling. Be careful that chicken pieces are same thickness to ensure even grilling.
I enjoyed making the dish, and it turned out so juicy. My five year old said, "how'd you get it so juicy?" I served it with leftover pasta and sauce. I would make it again and serve as chicken tacos, with cilantro being one of the toppings.
We made this yesterday and thought it was delicious! Everyone in my family of 4 loves the citrus-cilantro-garlic flavor combination, so it was a big hit! This chicken is amazing. We cut the breasts in half and put it on skewers like satay chicken and grilled them from there. It made for a better presentation and was delicious!
Chicken Tacos: My family loves this! I cook it on the BBQ grill for that char-broiled flavor, then cut the cooked chicken into strips and serve on soft corn tortillas with the normal taco garnishes (including more cilantro and lime wedges!). I would definitely marinade it for more than the 30 minutes minimum for a more full flavor. Yum!
