Warm chocolate cake topped with rich chocolate icing is a decadent combination.

How to Make It

Step 1

Combine first 3 ingredients in a medium saucepan over medium heat, stirring until butter melts. Remove from heat.

Step 2

Combine flour, sugar, and baking soda in a large bowl; stir in butter mixture. Add eggs, and stir until blended. Stir in buttermilk, vanilla, and marshmallows.

Step 3

Pour into a lightly greased 13- x 9-inch baking pan. Bake at 350º for 25 to 30 minutes or until a pick inserted in center comes out clean. Remove from oven; spread Chocolate Coca-Cola Icing over warm cake.

Chef's Notes

Prepare the icing during the last 10 minutes of baking so it is ready to spoon onto the warm cake.

This is my favorite sheet cake recipe. But, and some of y'all might think I'm crazy, I have to double the icing recipe when I make it. I like to slather icing on, and when you use the recipe as written, it proves to be more of a glaze than a gooey frosting. That's my only change - delicious cake!

I thought this was just meh...moist (when warm at least) but not very chocolatey. I used milled soft white wheat flour, so this may have affected the texture; but I've learned how to achieve good results with this. I prefer layer cakes (which would NOT work with this recipe) anyway so I doubt I'll make this again. It's a creative use of flat soda but otherwise unremarkable.

I have made this cake & icing for 28 years (since my grandsons were one year old - they're now 25 & 29). It's my loving duty to serve this for all holidays and to donate it at bake sales...one generous chocoholic bought it for $70, donated it back to the auction, and bought it again for $300 !!! This cake is easy to make, if you like chocolate you will LOVE this, and it doesn't dry out !!!

I made this cake for an informal buffet at our home. It was a rave hit with lots of recipe requests. I normally make my carrot cake which is also well received, but decided to try this after eating it in a Charleston restaurant. And yes, the marshmallows do rise to the top.

This was very good. The icing kind of melts into the cake, so I think next time I'll make the recipe as indicated, then make another batch of icing and spread it over the cake when cool. Usually homemade cakes are dry, but this was incredibly moist. I used a can of regular Coke.
