I used Ghirardelli cocoa and semi sweet chocolate chips. Good, moist cookies and very sweet. Would've liked more coffee flavor and I used espresso granuales. I will make these again to use up cocoa mix. And I will try the peppermint cocoa mix I have sitting in the pantry as well.
These were very good - Makes a great gift for coffee lovers. I live in Georgia and did not have to add any extra flour as the other reviewer did. I had a 1/2 bag of cinnamon chips already in my cabinet so I used those along with 1 c of chocolate chips. It does make 8 dozen so I had plenty to give a way - next time I will try to 1/2 the recipe. It's a lot of dough - will need a heavy duty mixer!
