How to Make It

Step 1

Combine first 5 ingredients in a small bowl, stirring well. Coat drumsticks with cooking spray; sprinkle evenly with chili powder mixture. Cover and chill 30 minutes.

Step 2

Dredge drumsticks in crushed potato chips. Place drumsticks on a rack in a roasting pan. Bake at 400° for 20 minutes. Turn drumsticks, and bake an additional 15 minutes or until done.

Simple, easy, not messy, and great tasting. I used garlic salt instead of garlic powder and olive oil instead of a cooking spray. I doubled all the 1/8 tsp. spice measurements into 1/4 tsp. so there was enough seasoning to cover the chicken. I skipped the chip coating for time's sake and personal preference and rubbed in the spices. I also added a few more minutes to the cook time and it was still great. Really moist and tender with great flavor. I would use this recipe again.
