Yum! I took the recipe recommended for the pork and used a 1 pound tenderloin - grilled it with the same spices and apricot glaze and it made these wraps incredibly good! We each had 2 wraps for dinner along with some grapes. Nice and filling. Quick and easy. Will make again.
Amazing!! I substituted Greek yogurt for the mayo and chicken for the pork.

This was so amazingly delicious that I had to restrain myself from making a second wrap. I made the pork loin for dinner last night and the kids and I really liked it. Then I used it for the wraps today and YUM! I do feel bad that I sent my 12 yr old to school with this in her lunch. I think I added too much of the chipotle peppers and it was pretty spicy. Definitely a good spice that I loved, especially with the sweetness of the apricot glaze from the pork, but I think it might have been too much for a kid. Next time I will make separate batches of the avocado spread and leave the peppers out for the kids. If I weren't on a diet I would absolutely be having another wrap right now. I'm seriously considering having this for dinner tonight too, and I just ate it for lunch!
I defiantly think that this would taste better with chicken instead of pork.
Unreal! The avacado spread is delicious. I made the Simply Roast Pork recipe for dinner a few nights ago and it was very tasty. I tried making the sandwich with some of the leftovers today and I'm officially hooked. The spread is spicy with the chipotle peppers and goes perfectly with the slightly sweet, apricot flavor of the pork. I could eat this every day and be very happy. YUMMY! Side note...please don't give unfavorable reviews to recipes unless you're actually following the recipe. Saying something didn't turn out well when you used completely different ingredients is misleading to those of us who are looking for solid feedback on these recipes.
Great recipe! Used chicken instead of pork as that is what I had on hand. This recipe will be going straight into my favorites folder.
The simply pork recipe was delicious. Next time, I may make a little extra glaze to use after slicing, but it was very good, so I decided to use the leftovers in one of the recommended recipes. I thought the pork and avocado wraps were okay, but not great. I tend to like my wraps to be more sandwichy and less taco-eqsue. If you want something that's a twist on tacos, this is for you.
I just had this for lunch and while it was edible and a nice change from my usual peanut butter sandwich, i was not impressed.. especially since i wasted money on the ingredients. Keep in my mind this may be my fault because i go pre-made guacamole instead of advocados since i cannot pick a ripe advocado for my life, and i used Guy Fieri's Chipotle salsa to kill 2 birds with one stone (better than having that open can of chipotles in adobo collecting fridge dust). Didn't have pork so i used roast beef cold cuts. I don't really see how all of this could have greatly impacted the end result.. but who knows. All that aside it's a nice option for those of us who are pressed for time and money and watch their calories like hawks. I'll make again.. only cause i have the ingredients to do so! :)
This was wonderful and made a great starting point for other sandwiches. I also used leftover pork tenderloin (raspberry chipotle marinated) for these wraps and was so very happy with the results. I have since used the basic avocado spread on my Not Quite a Cubano sandwiches rather than mustard to rave reviews from friends and family. So easy, so yummy and so simple that I wonder why I didn't think of it myself!
I will rate this a 5 because I don't think it's worthy of a special occasion, but is very good. As mentioned, the avocado sauce is fantastic. I used leftover pork tenderloin so it was a great start, served with the corn and black bean side and some yellow rice. Excellant weeknight for leftover pork!
YUM!!!!!!! This was so awesome, delicious, and amazingly easy! The pork is really great on its own, but with the flavor of the chipotle with adobo sauce it is to die for! I will definitely make this again! I love the idea of using the dip as a stand alone dish for chips and crackers. I am always looking for new ways to eat avocado so this will be a regular in our house. I used a peach pineapple salsa and it brought out the sweetness of the pork very well.
fantastic. My husband and I were shocked at how great these were for the simplicity. We've used both pork & chicken. We have started using the avocado spread as a stand-alone dip with chips and at every party is has been gone before everyone has even arrived. thanks for another great recipe!
