2 teaspoons vegetable oil
1/2 cup chopped red bell pepper
2 garlic cloves, minced
1/4 cup bottled chipotle salsa (such as Jardine's)
1 (15-ounce) can black beans, rinsed and drained
2 tablespoons chopped fresh cilantro
How to Make It
Heat oil in a medium saucepan over medium heat. Add bell pepper and garlic; cook 5 minutes, stirring occasionally. Stir in salsa and beans; simmer 5 minutes. Sprinkle with cilantro.
Super simple idea. Made to recipe using Trader Joe's chipotle salsa. The combo of red pepper and black bean was very attractive on the plate. Served with CL's summer corn/squash and spicy shrimp tacos with tomatillo salsa. Very good meal.
This is a very tasty side dish and also works well with rice as a main dish filling for vegetarian burritos or enchiladas.
I didn't have any salsa or red bell pepper handy, so instead I sauteed some onion, garlic, fresh tomato, and 1 canned chipotle pepper. Like the notes say, it's very easy to vary the recipe depending on your taste.
